How to make the perfect roast:
Season and bake at 475 for 20 minutes. (Can pre-sear if you like to lock in juices).
Turn oven down to 325 and bake for 7 minutes per pound of meat.
Turn stove off and DO NOT OPEN for 2 1/2 hours. (Please don't touch at all.)
Voila! Lovely beef. Pink but should not be bloody. Tender. You'll love!
